For one month, our Complex Gin rests on applewood staves — a slow, deliberate exchange in which the wood rounds the spirit's edges into honey, almond and vanilla, and leaves a fine thread of smoke on the finish. Nothing added. Just time, wood, and precision. The botanical bill includes blue juniper berries, wild African ginger, tonic root, snowbush, and pink pepper.
